Aioli is a rich, creamy sauce traditionally made with garlic, egg yolks, lemon juice, and olive oil, using a mortar and pestle. It is a staple condiment in Provence, France and the Catalonia region of Spain. There are countless variations out there in the world—and many of them omit egg yolks, use mayonnaise as a shortcut, or include other spices. Whichever way it’s prepared, aioli is found served alongside an array of dishes that range from burgers and fries to vegetable crudités and boiled eggs.
