As you may know by now, Thanksgiving is our absolute favorite holiday—it’s the time when we get to enjoy delicious food with friends and family, while catching up in between. Today we’re sharing five of our favorite three-ingredient Thanksgiving recipes that will please any crowd. Truth is, you don’t always need a shopping cart full of ingredients to achieve a delicious outcome. Whether you’re hosting or bringing a side dish along to a potluck, these recipes will save you time and money (and, perhaps another trip to the grocery store).
2 cups frozen cranberries
1/3 cup sugar
Peel 1 big strip orange zest, then halve the orange.
In a small pot, combine sugar and juice of orange. Stir over medium heat to dissolve sugar, then add cranberries and zest.
Simmer over medium heat until cranberries are warm and burst, 5–7 minutes. Season with salt and pepper.
Creamy Mashed Potatoes
1 pound russet potatoes
¼ cup heavy cream
2 tablespoons unsalted butter
Medium to large pot
Peel potatoes, cut into ½-inch pieces, and place in a pot. Cover with cold water, salt generously, then bring to a boil over high heat and cook until tender, 8-10 minutes.
Drain and return to pot. Add milk and butter and mash until very smooth. Season with with salt and pepper.
Warm Fig and Goat Cheese Spread
1 log goat cheese
½ cup fig jam
2 sprigs thyme
Place goat cheese log on a foil-lined baking sheet.
Spread fig jam all over, and sprinkle over thyme leaves. Broil until sticky and warm, about 5 minutes. Serve with crusty baguette.
Pumpkin Spice No-Churn Ice Cream
½ cup heavy cream
3.5 ounces condensed milk
1 teaspoon pumpkin pie spice
Whisk or electric mixer
Whisk together heavy cream until thickened and stiff peaks form.
Add condensed milk and pumpkie pie spice and whisk gently to fully combine.
Pour into a baking dish and spread in an even layer. Place a sheet of parchment on top, pressing to adhere. Freeze until thick, 45-60 minutes.
1 ½ ounces bourbon
¾ ounce dry vermouth
¾ ounce campari
2 parts bourbon
1 part vermouth
1 part campari
Another glass or cocktail shaker
Chill a cocktail glass in the freezer for 5 minutes. Fill another glass or a cocktail shaker with ice, then pour over all ingredients.
Stir or shake vigorously to chill, then pour into chilled cocktail glass. Garnish with an orange slice, if desired.
