Chef Giuseppe is always experimenting with new versions of grilled cheese, one of his favorite comfort foods. Tonight he adds sautéed broccolini and pepperoncini—pickled sweet peppers that provide a tangy counter to the white Cheddar. Toasted in a skillet “just like Mom used to make,” these sandwiches are bound to bring back some delicious memories (and create some new ones).
