You call it summer—we call it eggplant season. We’re bringing a Plated classic back from last summer with a seasonal favorite, charred eggplant. This dish features Italian eggplant rubbed with olive oil and a touch of spicy cayenne pepper and broiled until it’s completely tender. And for a protein-packed tabbouleh, we’re subbing couscous with quinoa, tossed with tomatoes, red onion, cucumber and parsley. Drizzled over it all? A creamy, lemony tahini that rounds out the Middle Eastern flavors of this dish.
